I am desperately trying to find where I can customize a Magic Move from the pulldown menu in the Animation tab. Right now, custom isn't even an option. I also do not know exactly where I can then find the curves panel for further customization.

You may want to look at adding an action and create a path. Magic Move will just create a transition of an object from one slide to the next, so you can’t get it to curve (from how I have understood it). You can create specific path of your objects if you us Create A Path.
Tap on the object you want to animate>click add action>select create path.
