A few years ago, we worked with a 5th grade team on a fun STEM engineering process project. Their students were to create a gingerbread structure that would withstand a flood and an earthquake. (Bonus was surviving a landslide/boulders.) They went through the process of learning the design process, brainstorming, constructing and testing before the final "event". The teachers wanted a way to gather information, resources and evidence in one place. We helped them design this project notebook where resources were stored, students could add their own resources/links, voice, video and images of their progress, as well as text. It was a big hit!
Really cool. I have a couple of groups build ginger bread houses and this activity well help then level up the process.

This sounds like a really engaging STEM challenge, and the learning journal is such a valuable means of documenting the stages of their learning process. Did the students use graham crackers, or did they use other materials? If it is a few years ago, it might be difficult to find some photos of their designs. I am intrigued as we currently covering the same unit this term.
